Balsamic Greek Vinaigrette

Vinaigrette is a sauce made typically of oil, vinegar, and seasonings and used especially on salads, cold meats, or fish and made by mixing an edible oil with a mild acid such as vinegar or lemon juice (citric acid). 

The mixture can be enhanced with salt, herbs and/or spices. It is used most commonly as a salad dressing, but can also be used as a marinade.

Ingredients:

•  ¼ cup extra virgin olive oil
•  2 tbsp balsamic vinegar
•  2 tbsp red wine vinegar
•  1 tsp dried oregano
•  1 clove garlic, minced
•  1 tsp honey
•  ½ tsp Dijon mustard
•  ½ tsp salt
•  ¼ tsp black pepper

Instructions:

1.  In a jar with a tight-fitting lid, combine olive oil, balsamic vinegar, and red wine vinegar.

2.  Add oregano, garlic, honey, and Dijon mustard.

3.  Season with salt and pepper.

4.  Shake vigorously until well combined.

5.  Let sit for 10 minutes before serving.
