Crispy Skin Snapper with Lemon Butter Sauce & Broccoli Purée

A refined, colorful plate featuring golden snapper over vibrant purée and citrus gloss.

Recipe Card:

• 1 snapper fillet, skin-on
• Salt & pepper
• 1 tbsp olive oil
• 1 cup broccoli florets
• 2 tbsp cream
• 1 tbsp butter
• 3 tbsp Lemon Butter Sauce
• Microgreens & edible flowers


Instructions:

 1. Boil broccoli until tender. Blend with cream and butter until smooth. Season with salt.
 2. Season snapper with salt and pepper. Sear skin-side down in olive oil until crispy (~4 min), then flip briefly.
 3. Spoon broccoli purée on the plate. Place snapper on top.
 4. Drizzle with lemon butter sauce and garnish.
