Make Sweet and Sour Sauce
Sweet and sour dishes is

- sauces, and cooking methods have a long history in China
- One of the earliest recordings of sweet and sour may come from Shaowei     Yanshi Dan   traditional Chinese
- mix with water with a variety of fruits and vegetables like carrot, cucumber,  onion, wood ear mushroom, and pineapple
- Starch slurry is used to thicken the sauce
- sweet and sour sauce is a mixture of sugar (sweet) and vinegar (sour).
- sugar can come from a wide range of sources: honey, plums and other fruits, syrups, and even melted candy.

Ingredients:

 • 1 cup pineapple juice
 • 2 tbsp rice vinegar
 • 3 tbsp ketchup
 • 1/4 cup white sugar
 • 2 tbsp soy sauce
 • 3 tbsp water
 • 1 tbsp cornstarch
 • 1/4 tsp black pepper

Instructions:

 1. In a saucepan, combine pineapple juice, rice vinegar, ketchup, sugar, soy sauce, and black pepper.
 2. Bring to a gentle boil over medium heat.
 3. In a small bowl, whisk cornstarch and water into a slurry.
 4. Stir slurry into the sauce and simmer until thickened, about 2–3 minutes.
 5. Use immediately or let cool and refrigerate in an airtight container
